High in Vitamins K, C, and A, broccoli is a member of the cancer-fighting cruciferous classification of vegetables. Served steamed, it has special cholesterol reducing abilities due to the reaction the fibers have when they combine with bile in our digestive tracts. Try this yummy salad with a little sweet and crunch as a new side dish  - its easy and makes getting that extra serving of green a lot more palatable.   

2 bunches broccoli
1 cup walnuts (toasted in 350 degree oven for 10 minutes)
1/2 cup cranberries (soaked in hot water for 5 minutes)
1/2 orange, juiced
4 green onions (scallions) white part - chopped thinly
2 tablespoons olive oil
salt and pepperer

Steam broccoli until tender. Chop into 1 inch pieces and toss with cranberries and chopped walnuts. Add chopped onion and drizzle with orange juice and olive oil. Season with salt and pepper to taste.
