Preparing whole, nutritious foods for our families can be one of the biggest pleasures in life, providing we have the right attitude and approach. When we take the time to get creative, it is an opportunity to encourage our tots to eat healthy and realize that eating veggies and fruits can be fun and delicious. Also a perfect opportunity to explain the powerful healing properties of a plant based diet! 

For breakfast - slice a red pepper (rich in anti-oxidants, lycopene, and cartenoids), drop an egg into it and cook on a cast iron skillet. Serve with a steamed asparagus spear, a few baby spinach leaves and whole grain toast triangles. Yum!
