One of the main challenges with sticking to a healthy vegan or vegetarian diet is the feeling that you are missing out on certain delicious and creamy textures and consistencies of foods you get for example from a sinful creamy artichoke drop, cheesy "con queso" or rich tasting ranch dressing. Whether you are experimenting with a healthier eating style to lose weight or improve your health as your primary goal (BTW these go hand in hand) rest assured that all you have to do is try this once and you will see that you don't have to give up that creamy/sinful/rich texture when you make the transition to a healthier lifestyle. Avocados are the main ingredient in this dip, and according to the World's Healthiest Foods website, they are full of fiber (30%) as well as carotenoids which help reduce inflammation and fight diseases like cancer, heart disease and diabetes. Serve with toasted whole grain pita chips, carrot/crudite platters and even mixed into salad greens as a creamy dressing.

Green Goddess Dip

  • 2 Ripe Avocados
  • 1 Tablespoons Raw Stone Ground Tahini
  • 3 Tablespoons Olive Oil
  • Juice of 1/2 lemon
  • Sea Salt to taste
Puree in vitamix or standard blender until desired consistency. Consume within 24 hours. (If not planning to consume immediately save avocado pits and store in dip to keep the color from turning).
