Kale is truly a superfood - it helps fight cancer, cardiovascular disease, obesity, ulcers, macular degeneration, and diabetes. If you are interested in regulating your blood sugar and thereby controlling cravings, this is your veggie. Kale is a high fibrous green that has lots of alkaline body balancing powers, which will keep your immune system strong and resilient and keep your blood sugar in check. We have every reason to want to make this delicious hearty green part of our daily diet. The funny thing is my first time trying kale was only a few years ago - and now i never go more than a few days without sneaking it into my diet. Smoothies, Juices, Soups, Chips, Pestos, Saut├ęs, Salads, Sandwiches - its good hot or cold, raw or cooked, whole/sliced/pureed or in liquid form. Can you think of a more versatile vegetable? Try this salad - raw, vegan, gluten free, and BTW very easy! No tools, just your hands needed.

Avocado Kale Salad 
I bunch kale, torn into 1 inch pieces
1 avocado
1/2 cup cranberries
1/2 cup sprouted sunflower seeds
juice of 1/2 lemon
Drizzle of olive oil
Dash sea salt

Wash and tear kale into 1 inch pieces - dry thoroughly. Scoop flesh of avocado out of shell - mash and massage into the dried kale with your hands - try and get it evenly distributed. Drizzle with a bit of olive oil. Toss in cranberries and seeds. Squeeze lemon onto leaves and mix with sea salt to taste.
