Swiss chard, high in phytonutrients and vitamins K, A and C, is recognized as a healthy food not only for its high nutrient density but also its blood sugar regulating properties. Pair with quinoa, a protein packed grain-like seed, as well as anti-oxidant rich lemon and garlic and this combination  takes on a very meal like feel.   


1 Bunch Swiss Chard
2 Tablespoons Olive Oil
2 Cloves of Garlic - chopped
1/2 of lemon 
Salt and Pepper to taste

To Prepare:

Wash quinoa and cook as instructed on package - (usually takes about 15 minutes). Wash a bunch of swiss chard leaves, and separate the stems from the leaves. Chop the stems finely and reserve. Dry the leaves and slice them into ribbon like pieces, 2 inches or so in width. Heat 2 tablespoons of olive oil in a sauté pan, add chopped garlic cloves when oil is hot and shimmering. When garlic becomes fragrant add stems and cook for a few minutes until they begin to soften. Add chard leaves and stir well to coat with oil and garlic flavor. Sprinkle with salt and pepper, and cover for a minute or so until greens begin to wilt. Add in cooked quinoa, squeeze fresh  lemon - remove from heat and serve.
