The American Cancer Society recommends legumes such as chick peas as a key food group for preventing disease and optimizing health - high in folate, fiber and protein, they are a nutritional staple in kitchens for many cultures around the world. According to the American Institute of Cancer Research, 3 compounds in chick peas (saponins, protease inhibitors, and phytic acid) may help defend cells from the type of genetic damage that can lead to cancer.  Dietary Guidelines developed by the U.S. Department of Health and Human Services recommend 3 cups of legumes per week - try this delicious soup for lunch or dinner as a way to get your fill this week!

Recipe: Using a dutch oven, saute onion and garlic until softened. Add rosemary, chick peas, tomato, and 4 cups of water. Bring to a boil, then simmer for 20 minutes. Puree soup in blender, then add in balsamic, cheese and serve.
